This Certificate III prepares students for entry-level pastry roles across Fiji's hotel, restaurant and commercial catering sector, building the baking fundamentals, bread-making and basic pastry techniques needed to work as a commis, kitchen hand or assistant cook. It gives school leavers a direct route into the hospitality workforce.
Applicants need a pass in the Fiji Year 11 Certificate Examination, though mature students already working in a bakery or patisserie section who want to formalise their skills through industry experience are also accepted. The qualification is a 1-year, 90-credit-point award offered at the Labasa, Namaka, Ba and Nasese campuses.
