MA/MS in BEZBJEDNOST HRANE (2020)

This master's programme in food safety is an academic course at the University of Montenegro. It focuses on the quality and safety of food and on protecting people and the environment from contaminants. The curriculum is organised over three semesters. The first covers food knowledge and nutritional value, technological operations in food production, preservation, packaging and storage, food microbiology, and chemical and physical contaminants. The second includes quality control of wine and spirits, good manufacturing practice in food processing, ecotoxicology, pesticides, pests of farm products and plant pathogens in food production. The third offers electives on water technology, sustainable farming, wastewater, wine technology and standards, together with food quality and safety systems, environmental protection, the food market, certification and accreditation, and standardisation. Graduates are expected to monitor the microbiological safety of food, organise analyses, know European Union and Montenegrin food safety rules, and apply ISO standards and HACCP.
