— it helps other students.
The Professional Culinary Arts and Hospitality certificate prepares students for work as kitchen managers and operations cooks. It also serves people already employed in the field who want additional training.
Students study how a kitchen is organized and kept sanitary, how production is planned, and how food is prepared in quantity with attention to timing, quality and cost. Further topics include raw ingredients, recipes, menu planning, institutional equipment, banquets, catering and other specialty preparations.
Hands-on laboratory work is a central part of the program and takes place at the Highlands Campus and The Hotel Jacaranda. The certificate totals forty occupational credits.
The program also provides supplemental training for people who currently work or previously worked in this occupation, so it suits both newcomers and experienced staff looking to formalize their skills before moving into kitchen leadership roles or catering work.
