Ce programme forme au service de salle à manger et à la gestion de restaurant et d'hôtel dans un environnement axé sur la pratique et l'approche personnalisée. La formation couvre la vente des mets, boissons et vins à l'aide d'un logiciel de point de vente, le langage culinaire et l'organisation de la cuisine, le contrôle des aliments et des boissons, l'accueil en hôtellerie et la conciergerie, la gestion financière, la vente et la mise en marché ainsi que l'approche client. Les compétences se mettent en pratique dans les laboratoires et au restaurant-école Les Jardins de La Cité, ouvert au public, et des stages en milieu de travail complètent la formation.

Admission Requirements: Before starting, students need an up-to-date immunisation record. Domestic Ontario applicants need the OSSD or equivalent, or, at 19 or over, a pass on La Cité's mature-applicant test; Quebec applicants need the DES, and New Brunswick applicants the provincial DES, on the same mature-applicant basis. International applicants need a secondary diploma/baccalaureate or proof of enrolment in their final secondary year; La Cité states its admission process is competitive because of limited places and that admission is never guaranteed even when every requirement is met. No separate language test score, portfolio or interview condition is published; French is the language of instruction.
