Overview
Learners will perform all phases of kitchen activities including the preparation and presentation of vegetables, soups, sauces, meat, fish and poultry; cold kitchen items; desserts, baking, pastry; basic menu planning/costing as well as knowledge of safety, sanitation and food storage. Learners will also gain valuable knowledge of human and customer relations which will enable them to become leaders in their field.
Level 1 starts learners in a fully supervised environment performing basic cooking and food preparation tasks. There is a standardized SkilledTradesBC exam upon completion of this level.
Learners will move to partially independent tasking in level 2, performing a variety of cooking and food preparation. There are standardized SkilledTradesBC exams upon completion of this level, accompanied by the work-based training hours necessary for SkilledTradesBC Level Certifications.
Requirements
Admission Requirements: Admission to this SkilledTradesBC-registered apprenticeship is level-specific: Levels 1 and 2 require 'eligibility as indicated by SkilledTradesBC,' and Level 3 requires successful completion of PCOI 202 or an equivalent as determined by SkilledTradesBC. No English, French, or other language proficiency score is published for entry. Once enrolled, apprentices must maintain a minimum of 70% in all courses. Before the programme begins, students must provide proof of a valid Foodsafe Level 1 certificate covering the full duration of study, and failure to submit it can result in dismissal. Applicants must also have a computer meeting minimum specifications; the programme is not eligible for Canada Student Loans. At the time of review no intake dates were scheduled for any level at the Dawson Creek location, as the programme runs on a cohort-intake basis.

Application Deadline:Northern Lights College uses one admissions calendar for domestic and international applicants alike, applying through EducationPlannerBC or in person. Applications open about eleven months before each intake: 1 October for the following Fall, 1 February for the following Winter, and 1 June for the following Spring. For the 2027 cycle the priority deadline is 30 September 2026 for Winter 2027 entry, 31 January 2027 for Spring 2027 entry, and 31 May 2027 for Fall 2027 entry (dual-credit applicants get until 24 October 2026 and 23 June 2027 respectively), with a tuition deposit due about a month after each priority date. NLC states international applicants already in Canada on a valid visa follow the same domestic deadlines; after the priority date, seats remain open, on a rolling basis, until each term's add/drop date. These are institution-wide dates; this programme publishes no deadline of its own.
