NAIT's Cook programme is an apprenticeship leading to a Journeyperson Certificate for a career preparing and presenting food in commercial settings such as restaurants, hotels, ships, remote worksites and institutions. The apprenticeship combines paid work experience with a sponsoring employer and blocks of in-class technical training at NAIT's Hokanson Centre for Culinary Arts on the main campus, including the opportunity to work at the on-campus restaurant, Ernest's. Training covers trade mathematics, butchery and ingredient selection, and the specialized role of the entremetier (vegetable chef) alongside broader culinary techniques, food safety and kitchen operations. Admission, sponsorship and technical-training scheduling for the Cook apprenticeship are administered through Alberta's apprenticeship and industry training system rather than a standard academic application process.
Requirements
Admission Requirements: To register as an apprentice in Alberta for this trade, applicants must be a resident of Alberta or primarily working in Alberta within the scope of the apprenticeship, and must be a Canadian citizen, permanent resident of Canada, Convention refugee or protected person, a refugee claimant holding a work permit, a Post-Graduation Work Permit holder, or a Ukrainian citizen living as a temporary resident who meets Apprenticeship and Industry Training conditions. Entrance requirements are specific to the trade, typically based on required high school courses, with alternative options available if these have not been met. Applicants must also secure a sponsor — a business or organization providing paid on-the-job mentorship — before starting on-the-job training, though registration and classroom instruction may proceed before a sponsor is found.
