Professional Cook 2 Institutional Entry Certificate

This certificate follows the Skilled Trades BC prescribed curriculum for institutional entry to Professional Cook 2, the second level of the professional cook trade sequence. Students build on the foundational skills covered in Professional Cook 1 and perform all phases of kitchen activity, including food preparation, cooking techniques, and kitchen operations, under instructor supervision. The program runs for approximately 420 hours over 14 weeks and is delivered on campus at the Dawson Creek campus of Northern Lights College, where the full level must be completed in person. Entry requires successful completion of PCOI 102 or an equivalent recognized by Skilled Trades BC, along with a minimum of 1000 hours of work-based training reported to Skilled Trades BC before enrollment. Applicants must also provide proof of a valid Foodsafe Level 1 certification one month before the program starts. Graduates progress toward Red Seal certification as a professional cook through the Skilled Trades BC apprenticeship pathway.
