This one-year certificate, totalling 50 weeks and 1,600 hours at Okanagan College's Kelowna campus, trains students in professional baking and pastry work with an emphasis on Okanagan-region ingredients, artisan techniques, and pairing baked goods with beverages. The program is structured in three parts: an initial term covering foundational skills in breads, pastries, cakes, and creams alongside kitchen safety; a 10-week co-op placement that puts students into a real bakery or kitchen workplace; and a concluding term focused on advanced techniques such as celebration cakes, artisan breads, and plated desserts. The curriculum aligns with the National Occupational Analysis for Baker Level 1, connecting classroom learning to the standard the trade is assessed against nationally. The program prepares graduates for work in bakeries, fine dining kitchens, hotels, resorts, and cruise ships, or for self-employment as a baker or pastry chef. It suits career-changers and baking enthusiasts with little or no prior professional experience who want a fast, structured route into professional pastry and baking work, combining campus instruction with hands-on workplace experience through the embedded co-op term.

Requirements

Admission Requirements: Admission to the Pastry Arts Certificate follows Okanagan College's standard trades entry point: applicants need B.C. secondary-school graduation or the equivalent, or, as a mature applicant, to be at least 19 years old and out of secondary school for at least one year. The English requirement is met by English 10 with a minimum of 50 percent or one of the college's published alternatives; the math requirement is a minimum of 50 percent in Mathematics 10, Foundations of Mathematics and Pre-Calculus 10, Adult Basic Education MATH 071/072, or a passing score on the college's own Trades Entrance Assessment, required for applicants who have not met the math or English standard within the past seven years. Applicants must also submit a valid, non-expired FOODSAFE Level 1 certificate. No IELTS, TOEFL or other standardized English test, minimum grade point average, portfolio or interview is published. Applications are currently closed and reopen in January 2027 for a September 2027 start.

Application Deadline: Domestic applicants apply through EducationPlannerBC (a $30 CAD fee): Okanagan College sets no fixed closing date for most programmes in the 2026-27/2027-28 cycle. Applications for a Fall intake open at 8:30 a.m. on October's first business day of the preceding year, and for a Winter intake at 8:30 a.m. on February's first business day of the preceding year (exceptions apply); Practical Nursing's January intake opens at 9:00 a.m. on April's first business day of the preceding year. Most programmes accept applications until seats fill, though Nursing and Dental programmes set their own fixed or ranked deadlines on their own pages. International applicants also apply through EducationPlannerBC, paying a $100 CAD per-programme fee; the College publishes no institution-wide international closing date and directs applicants to each programme's own page. Admission is otherwise rolling. These are institution-wide dates; this programme publishes no deadline of its own.
