Program details

Overview

This foundation certificate introduces high school students to professional baking while allowing them to earn credit toward apprenticeship Level 1 before graduating. Delivered full-time at VCC's Downtown campus over 24 weeks, with classes Monday to Thursday afternoons and evenings, the programme is organized into six courses totalling 24 credits, covering general baking fundamentals, yeast products, and cakes and pastries. Coursework includes quick breads and cookies, pies and tarts, basic and rich yeast doughs, and basic and specialty cakes and pastries, taught in VCC's professional baking labs. Students gain practical production experience by preparing items sold through the VCC Bakeshop, working alongside instructors in a real bakery operation. On completing high school, graduates can return to VCC to continue into more advanced pastry or artisan baking certificates, building on the foundation established in this programme. It suits high school students with an interest in professional baking who have good organizational and time-management skills and are comfortable working both independently and as part of a team. Because the work involves handling wheat, dairy, eggs, and nuts and requires physical stamina for standing and repetitive tasks, students without related food allergies and with reasonable physical fitness are best suited to the programme.

Requirements

Admission Requirements: This Youth in Trades program does not take applications directly: interested secondary students must go through their school district's Career Program Coordinator, attend an interview with two members of the baking department bringing a resume and a teacher or counsellor reference letter, attend a required information session, and complete the Youth in Trades Application. Academic prerequisites are English at a Grade 10 level or equivalent and Apprenticeship and Workplace Math 10 or equivalent; a valid BC FoodSafe Level 1 Certificate, kept valid throughout the course, is also required. No English-proficiency test score (IELTS, TOEFL, PTE, Duolingo or CAEL) is stated beyond the Grade 10 level. General VCC conditions apply: Canadian citizen or permanent resident, official transcripts and documents submitted. The program expects basic computer and word-processing skills, physical stamina and hand-eye coordination, and disclosure of any wheat, dairy, egg or nut allergy.

Application Details

Start Date: July
Application Deadline: Domestic applicants (Canadian citizens and permanent residents) apply through EducationPlannerBC. VCC publishes each programme's own application window, term by term, on its When to Apply page rather than one college-wide date: windows open roughly six to twenty months before the term starts and close on a stated date, though popular programmes can close earlier once seats fill, since places generally go to eligible applicants in the order their application is completed. International applicants use the International Applicant option on EducationPlannerBC; VCC opens international applications on 1 February of the previous year for Winter entry, 1 June for Spring/Summer, and 1 October for Fall, with no fixed closing date — applications continue until roughly three to four months before the term begins or until it fills, so admission is effectively rolling for international applicants. These are institution-wide dates; this programme publishes no deadline of its own.
