Professional Cook 1 Plus Certificate is a foundation in Culinary Arts programme taught at Vancouver Community College in Vancouver, Canada. The programme runs for 32 weeks, delivered on campus. Teaching is in English. Tuition is CAD 4,300 per total for local students.
This certificate programme prepares students for entry into British Columbia's professional cooking trade, aligned with SkilledTradesBC training standards as a step toward Professional Cook Red Seal journeyperson status. Delivered full-time at VCC's Downtown campus over 32 weeks, with classes Monday to Thursday from 7 a.m. to 2 p.m. (with different hours during the final catering course) and a maximum completion window of three years, instruction takes place across industrial kitchens, service outlets, and classrooms. Coursework covers soups and stocks, meat, seafood, poultry, breakfast preparation, cold kitchen work, and desserts, building a broad foundation of practical cooking skills. The programme does not itself confer Red Seal certification but positions graduates to continue working toward that designation through further apprenticeship training with SkilledTradesBC. It suits secondary school graduates aged sixteen and over who meet Composition 10, Workplace Math 10, and Food Safe Level 1 requirements and are seeking hands-on entry into commercial hospitality kitchens. Career changers who already hold related trade certifications, such as bakers or meat cutters, may be eligible for course credit. Because kitchen work involves extended standing, heat exposure, heavy lifting, and high-pressure service periods requiring quick decision-making, the programme suits candidates comfortable working in a fast-paced, physically demanding environment.
