This Bachelor of Arts combines professional cooking skills with the management knowledge needed to run food and hospitality businesses. Students learn kitchen theory and technique, international and Cypriot cuisine, pastry, bakery, and the service of food and drinks, alongside subjects such as accounting, cost control, organisation and the design of food units.
Teaching mixes lectures with demonstrations and practice, using specialised laboratories as well as a gastronomic amphitheatre. Later modules cover kitchen organisation and management, food science and nutrition, oenology and specialised kitchens, and the course also looks at how to manage a culinary business as a whole.
Internship placements are offered in Cyprus and abroad, giving students experience in working kitchens and service settings. The school presents the degree as equal in standing to a university degree both in Cyprus and in Greece, and it reports medals won by its students at international competitions.
