Trades - Apprenticeship in Professional Cook 3: Apprenticeship is a trades - apprenticeship in Culinary Arts programme taught at Coast Mountain College in Terrace, Canada. The programme runs for 6 weeks, delivered on campus. Teaching is in English. Tuition is CAD 500 per total for local students.
This programme delivers the final level of the Professional Cook apprenticeship, representing the national standard for the Red Seal Cook designation. Building on Levels 1 and 2, it covers the full range of kitchen operations, including preparing vegetables, soups, sauces, proteins, cold-kitchen items, desserts, and pastries, along with menu planning, costing, customer relations, and food safety and sanitation practices, preparing graduates to work with limited supervision. The classroom component runs 6 weeks and is offered across several Coast Mountain College campuses, including Terrace, Prince Rupert, Smithers, Hazelton, and Haida Gwaii, with intake timing arranged individually. Entry requires completion of Professional Cook Levels 1 and 2. Graduates who complete Level 3 become eligible to write the Interprovincial Red Seal examination, and passing this alongside the required practical and work-based hours leads to Red Seal Journeyman Cook status, recognised in Canada and internationally. The programme suits apprentices who have completed the first two levels and are working toward full trade certification, positioning them for advanced roles in restaurants, tourist lodges, remote work camps, cruise ships, and catering companies, including internationally.

Application Details
Application Deadline:Coast Mountain College runs one common application calendar across its campuses rather than a single date per programme. Domestic applicants: for the 2026-27 academic year, applications opened 1 October 2026; the final day to apply is 24 December 2026 for Winter (January 2027) entry, 23 April 2027 for Spring/Summer 2027, and 30 August 2027 for Fall 2027. International applicants share the same opening date but face earlier cut-offs: 1 October 2026 for Winter, 1 February 2027 for Spring/Summer, and 1 June 2027 for Fall, and some high-demand programmes may close sooner. Trades and other varying-start programmes are judged against their own start dates (international due three months, domestic one week, before start), and continuous-intake programmes accept applications year-round. No single closing date exists beyond these cut-offs. These are institution-wide dates; this programme publishes no deadline of its own.
