West Coast Culinary Diploma

The West Coast Culinary Diploma is a two-year Coast Mountain College programme combining a Professional Cook Level 1 credential (Year 1, 49 weeks, 840 hours) with a Professional Cook Level 2 credential (Year 2, 22 weeks, 420 hours), for roughly 71 weeks of instruction in total. The curriculum pairs standard culinary training with West Coast food-sourcing, harvesting and processing content, including hands-on kitchen instruction and land-based learning. Classes run five days a week for six hours a day, typically in early-morning sessions with occasional evening sessions for experiential components. Admission requires a Grade 12 credential or mature-student status, English Studies 10 (or First Peoples English 10) or equivalent, and Apprenticeship & Workplace Math 10 or higher, or a passing Canadian Achievement Test score. Graduates complete both Professional Cook levels required to pursue a career as a chef.
