Overview
This is the direct-entry, in-school technical training component of Level 1 of the Professional Cook apprenticeship, part of Camosun's Red Seal-endorsed culinary program. In-person training runs approximately six weeks, delivered at Camosun, with an alternative self-paced online E-pprentice option available for those who prefer to work around their own schedule. As with other trade apprenticeships, roughly 80 percent of an apprentice's time is spent working and earning under an employer, with the technical training portion completed separately each year. Successful completion leads to the Professional Cook 1 BC Certificate of Qualification, an early step toward the Red Seal Professional Cook credential achieved after completing Levels 1 through 3. This direct-entry option suits people entering the cook trade without having first completed a foundation program, working in settings such as restaurants, hotels, catering or institutional food service while completing their technical training.

Admission Requirements: Professional Cook 1 at Camosun is offered as a SkilledTradesBC sponsored apprenticeship (Direct Entry), and the programme page sets no separate academic grade, English-language, or portfolio requirement. To apply, an applicant needs a registered employer who will sponsor and train them and a valid SkilledTradesBC registration number; the apprentice must be sponsored by an employer who is itself registered with SkilledTradesBC, and either party can contact SkilledTradesBC to register the apprenticeship contract. Applicants who instead want to start without an employer sponsor are pointed by Camosun to the separate Professional Cook Levels 1 & 2 Certificate (Institutional Entry), which carries its own English and math admission requirements.
