Program details

Overview

Italian Culinary Arts is a one-year Ontario College Graduate Certificate at Conestoga's Waterloo campus. The program combines practical and theory-based learning to build knowledge of traditional and contemporary Italian foodways, covering the techniques, ingredients, quality attributes, vocabulary, and procedures central to Italian recipes across the country's regional cuisines. In the program's second level, students travel to Italy to complete practical classes and experience Italian food culture firsthand. The program is intended for graduates of culinary management or related diploma, advanced diploma, or degree programs, preparing them for roles in professional kitchens, hospitality, and food service that draw on Italian culinary technique and regional cuisine knowledge, and it complements prior formal culinary training with a focused, single-cuisine specialization delivered over two academic terms, combining kitchen practicum work with theory-based study of ingredients and technique.
