Offered at George Brown Polytechnic's St. James Campus, the Honours Bachelor of Commerce (Culinary Management) is a four-year, hybrid-delivery degree that combines professional culinary training with business education. The program is positioned as the only four-year honours culinary-management bachelor's degree in Canada, intended to prepare graduates for kitchen leadership, food-service operations management, product development, or entrepreneurship rather than line-cook roles alone. A paid work placement forms part of the curriculum, arranged with industry partners identified by the college, and students are encouraged to pursue additional self-directed work experience aligned with their career goals. As part of George Brown's Bring Your Own Device policy, students are expected to supply their own laptop for coursework that requires computer access, with library equipment loans available as a backup. Admission Requirements: Direct entry requires an Ontario Secondary School Diploma with six Grade 12 University (U) or University/College (M) courses, including Grade 12 (U) English and any Grade 12 (U) Mathematics each at 60 per cent or higher, and a combined average of 65 per cent or higher across the six courses; mature applicants aged 19 or older without an OSSD need the same English and Mathematics courses at 65 per cent or higher. English proficiency for applicants without a qualifying secondary-school credential is met through George Brown Polytechnic ESL Level 9, TOEFL iBT 84 overall with 21 in each skill band, IELTS Academic 6.5 overall with 6.0 in each band, MELAB 85, or CAEL 70 overall with 60 in writing. George Brown notes that meeting the minimum requirements does not guarantee admission, and that the program's teaching kitchens use common food allergens including nuts, dairy and shellfish.

DOMESTIC applicants apply through ontariocolleges.ca: for programs starting in Fall 2027 the application opens on 26 September 2026, colleges may release offers from 1 November 2026, the equal consideration date is 1 February 2027 (applications completed by that date are ranked together, and later ones are then handled first-come, first-served while seats remain), and an offer for a September start must be accepted by 1 May 2027, with the tuition deposit due in June 2027. INTERNATIONAL applicants have no fixed deadline: they apply directly to George Brown and are assessed selectively on a rolling basis until the intake is full, so a program can close early. In the 2026-27 cycle George Brown opened the September 2026 intake on 6 October 2025, January 2027 on 2 February 2026 and May 2027 on 1 June 2026.
