PGCert in Charcuterie and Artisanal Foods

Charcuterie and Artisanal Foods is a one-year Ontario College Graduate Certificate at Conestoga College's Waterloo campus, delivered over two academic terms. The program builds on existing culinary training through chef-led demonstrations, lectures and hands-on practice in charcuterie and artisanal food production, including dry-curing salami and cheesemaking. Students study fermentation, curing, preservation and fabrication techniques drawn from culinary traditions in Italy, France, Spain and other countries. The curriculum also covers business skills for operating an independent food business, including developing a business plan and navigating government regulations and approvals. The program is intended for students with foundational culinary knowledge who want to specialize in artisanal food production or start their own food business, and is delivered on a full-time basis at the Waterloo campus.
