The Baker/Patissier Apprenticeship (Level I) is a part-time George Brown College Certificate that combines in-school learning with paid on-the-job training under Ontario's Ministry of Labour, Immigration, Training and Skills Development (MLITSD) apprenticeship system. It is the first of three in-school levels (H600, H606, H604) in the Baker/Patissier Apprenticeship program. Level I covers fundamental baking theories and techniques along with employability skills such as communication and mathematics, through hands-on courses in fermentation, cookies, pastry, and ingredients. Completion of all three levels, combined with employer-sponsored on-the-job training, prepares apprentices to write the Red Seal certification exam for bakers and patissiers through MLITSD. Admission requires an Ontario Secondary School Diploma or equivalent with grade 12 English (C or U) and grade 11 or 12 math, and registration as an apprentice with MLITSD under a registered employer sponsor, or mature student status (19 years of age or older) as an alternative. The program has open, continuous enrolment and charges a classroom fee of $678, currently covered by MLITSD.

Mature student status (19 years of age or older) is accepted as an alternative to the diploma requirement.
