This three-year apprenticeship, delivered in person at SAIT's Main Campus through the School of Hospitality and Tourism, trains apprentices in food preparation for hotels, restaurants, and other food-service establishments, working alongside SAIT's culinary instructors. Each of the three 12-month periods requires eight weeks of classroom instruction at SAIT plus on-the-job training, totalling a minimum of 1,560 hours across the apprenticeship. Coursework moves from food safety and butchery through advanced cooking techniques, kitchen management, and specialized areas such as patisserie and garde manger. Graduates earn journeyperson status through Alberta's Apprenticeship and Industry Training. The program does not accept international applicants; apprentices must be Alberta residents (or primarily work in the province) and hold Canadian citizenship, permanent residency, refugee status, or a valid CUAET visa.

Admission Requirements: Applicants must be a resident of, or primarily employed in, the province of Alberta, and hold Canadian citizenship, permanent residency, refugee status in Canada, or a valid CUAET visa. Applicants must be able to fluently read and write English and have basic math skills, and must meet SAIT's education requirements for the program. International applicants are not accepted.
