Ce certificat d'un an (deux étapes, 28 semaines) développe les habiletés nécessaires pour travailler dans une cuisine professionnelle, aux côtés de chefs-professeurs passionnés. Les diplômées et diplômés peuvent travailler partout au Canada, y compris au Québec, et intégrer directement la troisième étape du programme Gestion culinaire pour poursuivre leur formation.

Admission Requirements: Before the start of term, admitted students must have a current immunization record and no communicable disease. Ontario applicants need the Ontario Secondary School Diploma or equivalent, or, for applicants 19 and over, successful completion of La Cité's mature-applicant test. Quebec applicants need the Quebec Diplôme d'études secondaires or its own mature-applicant test, and New Brunswick applicants need that province's Diplôme d'études secondaires or mature-applicant test. International applicants must hold a secondary-school diploma or baccalaureate, or be in the final year of secondary school or lycée with proof of enrolment. La Cité's admission process is described as competitive because of limited intake capacity, and the college states that admission is never guaranteed even when a candidate meets every published requirement.
