AA/AS in Culinary Arts and Related Services

This degree combines culinary craft with kitchen science with a first introduction to managing a business. Students gain experience running a food operation through the campus Cuisine restaurant, the International Foods lunch service and kitchens serving business and industry. Graduates usually take jobs as cooks or trainees heading toward management. The training stresses leadership and a cooperative attitude, and a curriculum that includes service in the dining room develops analytical thinking. Courses address food preparation, cooking skill, controlling costs, nutrition and sanitation. Applicants should be comfortable reading and with basic mathematical reasoning. Students may earn a food service assistant diploma en route to the two-year degree. The program is held at the Downtown Milwaukee Campus, starting in August or January.
