Overview
The Professional Cook 1 programme at College of the Rockies is a 28-week, blended-delivery programme at the Cranbrook campus that gives students an institutional-entry route into foundational culinary skills training in a supervised kitchen environment. The curriculum, taught in part by Red Seal certified chefs, covers stocks, soups and sauces, vegetables and fruits, meats, poultry and seafood, garde manger (cold kitchen preparation), eggs, breakfast cookery and dairy, baked goods and desserts, and beverages, alongside mandatory Basic First Aid and WHMIS training. Students gain practical experience in fully equipped kitchens and in the college's own Class Act Dining Room. On completion, graduates receive a Certificate of Qualification for Professional Cook 1 (Institutional Entry) from the Industry Training Authority, credit for 600 hours of work-based training, and a College of the Rockies certificate.
