Overview
The Baker apprenticeship combines classroom theory with hands-on practice in an on-campus bakery, leading to Journeyman certification over three years. Coursework covers cookies, cakes, pastries and quick breads, creams, custards, fillings and icings, yeast-raised goods, trade mathematics and workplace safety, alongside business topics such as pricing, planning and running a bakery. The programme follows an eight-week apprenticeship model each year: four weeks of theory, which students can complete either online or on campus, followed by four weeks of in-person practical training in Lethbridge Polytechnic's campus bakery under industry-experienced instructors. The programme begins in late August. It is not currently open to international students, and applicants apply for a placement through Alberta's MyTradesecrets apprenticeship and industry training system.
Requirements
Admission Requirements: Applicants must have completed English 10-1 or 10-2 or equivalent and Math 10-1, 10-2 or 10-3 or equivalent, or hold a passing mark in all five GED/CAEC tests, or pass the Apprenticeship Entrance exam. English 30-2, Math 30-3, Physics 20 or Chemistry 20 are recommended but not required.
