Trades - Apprenticeship in Cook Apprenticeship

The Cook Apprenticeship is a three-year Red Seal trade program delivered through the Weekly Apprenticeship Training System, in which apprentices attend one day of classroom instruction at Lethbridge Polytechnic each week while working the remaining days with a registered employer. Coursework covers bakeshop techniques, butchery and protein cookery, cold kitchen preparation, management controls and nutrition, patisserie, and sauce work. The program combines technical training with supervised workplace experience across each of its three years, building toward competency in professional kitchen operations. Apprentices must be registered with an employer and Alberta's apprenticeship system to progress through the levels. On completing all three years and passing the Red Seal interprovincial examination, graduates receive certified Journeyman papers, recognized across Canada. The credential qualifies graduates to work as professional cooks in restaurants, hotels, and other food-service operations. The program is not open to international students, since it requires concurrent paid employment with an Alberta-registered training employer throughout its duration.
