Overview
The Culinary Arts diploma at Lethbridge Polytechnic is a two-year, on-campus programme covering restaurant production methods and both sweet and savoury culinary techniques. Students train in an on-campus student-operated restaurant and complete a paid industry placement as part of the programme. Coursework combines the scientific and technical foundations of food preparation with hands-on kitchen practice, covering areas such as baking, a la carte cooking and kitchen management. Admission does not require a completed high school diploma but does require specific English and Math courses at the Grade 10 level. Graduation requires an overall combined practical and theoretical average of 70 per cent. Lectures, labs and training take place on the Lethbridge campus, with intakes in late August and January. Graduates are prepared for cook and kitchen-management roles in restaurants, hotels and other food-service settings, with the credential also serving as a foundation for further study or industry certification within the culinary trade.
Requirements
Admission Requirements: Applicants must meet Lethbridge Polytechnic's general admission requirements for polytechnic programs, plus this diploma's own prerequisites of English 10-1 or 10-2, and Math 10-1, 10-2 or 10-3, or equivalents; a completed high school diploma is not required. From the 2027-2028 intake the program also requires applicants to demonstrate English language proficiency. For non-native English speakers, the institution's general benchmarks apply: IELTS Academic 6.0 overall with no band below 6.0, TOEFL iBT 80, PTE Academic 54, CAEL 60 overall (60 in Writing, 50 in all other bands), or Duolingo English Test 110.
