This one-year certificate program teaches specialized meat cutting and charcuterie skills alongside customer service and business management, preparing students for careers as butchers, meat inspectors or industry consultants. Coursework covers meat science, processing, value-added butchery, carcass breakdown, sanitation and charcuterie techniques including curing and smoking, delivered in person at Main Campus with roughly 25 hours of lab work weekly. Students prepare proteins for the Culinary Campus International Market and The Butchery by SAIT, the program's student-run butcher shop, and complete a professional internship during the second semester at an approved food service establishment. The credential requires 37.5 credits across 13 courses completed over two semesters. Graduates receive a SAIT Professional Butchery certificate; SAIT's most recent annual alumni survey reported a 92% graduate employment rate. The program accepts international applicants and meets the field of study requirement for the Post-Graduation Work Permit.

Admission Requirements: Applicants educated in Canada must demonstrate English language proficiency and complete the following courses or equivalents: at least 50% in Math 10C or Math 10-3, and at least 50% in English Language Arts 10-1, English Language Arts 10-2 or Humanities 10. Applicants educated outside Alberta may meet requirements through SAIT-accepted high school course equivalents, and applicants educated outside of Canada must demonstrate English language proficiency and provide an international document assessment confirming they meet the program's admission requirements.
