Program details

Overview

This two-year SAIT diploma provides meat-centric training covering all aspects of the meat and charcuterie trade, taught by Master Meat Crafters and chefs. Coursework builds theoretical and hands-on skills suited to butcher shops, meat retail outlets, restaurants, hotels, and other meat-focused food outlets. Between the second and fourth semesters, students complete a professional paid internship of at least 320 hours, arranged by the student with administrative support available, adding a formal work-integrated learning component. The program concludes with a year-end capstone project demonstrating the full range of skills developed. Optional international study tours to destinations such as Australia, France, Spain, Italy, Chile, and Thailand are available at additional cost. The program suits candidates with strong knife skills, physical stamina, attention to detail, and an interest in whole-animal butchery, curing, and artisan meat preparation, along with the ability to work evenings, weekends, or irregular hours. Standard full-time completion is two years, and graduates receive a SAIT Butcher Chef and Charcuterie diploma.
