Overview
This two-year diploma program at Holland College's Tourism & Culinary Centre trains students in the fundamentals and advanced techniques of professional cooking. Coursework covers knife skills, stocks, soups and sauces, meat, poultry and seafood butchery, baking basics, cold cuisine preparation, and international cuisine, alongside business topics such as restaurant operations and cost control. Practical training takes place through rotations in the college's on-site restaurants, where students prepare food for lunch service and fine dining. Classroom instruction in communications, nutrition, and wine and spirits knowledge supplements the hands-on culinary work. Students complete a paid 600-hour internship during the summer following their first year, giving them industry work experience before graduation. A Red Seal apprenticeship pathway is available for those who wish to pursue interprovincial cook certification after completing the diploma. Admission Requirements: The Culinary Arts page states no academic prerequisites beyond Holland College's college-wide rule for full-time certificate and diploma programs, so admission follows that general requirement (per the program page and hollandcollege.com's admission-requirements page): Grade 12 or equivalent with credits at or above the general level, plus a resume outlining work, volunteer and extracurricular experience. Every applicant submits a high school transcript and resume, and a post-secondary transcript as well if applicable; academic upgrading is available for anyone short of the required credits, and mature-student applications are accepted. English is the language of instruction: applicants whose first language is not English demonstrate proficiency with IELTS Academic 6.5 (no band below 6), TOEFL iBT 85, CAEL 60 (minimum 50 per band), PTE Academic 60, Duolingo English Test 120 (no section under 115) or Cambridge B2 First/C1 Advanced/C2 Proficiency 176 (no band below 169), among other accepted tests; graduates of a Canadian high school who completed English 621 in P.E.I. (or its provincial equivalent) with at least 70%, or applicants with three consecutive years of full-time English-medium post-secondary study completed within two years of the program start, are exempt. The program takes a September intake at the Tourism & Culinary Centre.

For the Fall 2027 intake, application review begins October 15, 2026 for early consideration, the competitive-program review date is February 28, 2027, and the first round of acceptance offers is sent by the end of March 2027; after February 28 later applications are still assessed as seats remain available right up to the program start date. International applicants use the same MyDashboard process and Holland College publishes no separate, fixed international closing date beyond these general review dates.
