This two-year diploma from SAIT delivers hands-on training in artisan breads, classic and modern patisserie, chocolate work, and confectionery, combined with culinary management coursework. Delivery is in person at SAIT's Main Campus, with the majority of scheduled time spent in dedicated baking labs; students are expected to put in roughly 20 additional hours a week of homework and review outside class. Between the first and second year, students complete a paid internship of at least 320 hours, giving the program a formal work-integrated learning component. Capstone courses give students the chance to showcase finished work, and graduates can pursue Red Seal certification in baking. Optional international study tours to culinary destinations are available at additional cost. The program suits candidates with an interest in precision baking and pastry work, comfort with early hours and physical, hands-on labor, and the discipline for repeated practice of technical skills. It accepts international applicants, though it does not currently meet Post-Graduation Work Permit eligibility requirements. Graduates are prepared for roles such as pastry chef, cake designer, or positions in luxury hospitality and retail bakeries.
