This French-language PhD program in food microbiology covers microorganisms across food manufacturing environments and food matrices, with an emphasis on food quality and safety. The program comprises 90 credits and takes an estimated four years of full-time study. Preparatory coursework in biochemistry, food chemistry, microbiology, or food engineering may be required, without counting toward program credits, if prior training is insufficient. A research supervisor must be confirmed in writing before an admission application is submitted. Graduates publish in peer-reviewed journals, present at conferences, and may go on to supervise graduate students or direct research laboratories in government or industry.
