This Master of Science (M.Sc.) program provides advanced research training in food microbiology. Students conduct original research on topics such as bacterial ecosystem characterization, the metabolic activity of lactic bacteria, control of pathogenic microflora, and the health effects of probiotics. The 45-credit, thesis-based program allows up to 6 credits of prior learning recognition and is expected to take two years of full-time study. Some courses are offered in distance, hybrid, or comodal formats. Admission occurs in the Fall, Winter, and Summer sessions. Before admission, candidates must secure a faculty member willing to act as research supervisor. Graduates are prepared for research, quality assurance, and technical roles in the food industry and for further doctoral study.

Admission Requirements: Applicants must hold a bachelor's degree in food science and technology, microbiology, or an equivalent field, with a cumulative average of at least 3.00 out of 4.33. Before submitting an application, candidates must contact a program faculty member and obtain written confirmation of research supervision. Non-francophone applicants must demonstrate French proficiency through the TCF tout public test, with a minimum overall score of 600 out of 699 and a minimum writing component score of 14 out of 20, or equivalent coursework. Adequate English reading comprehension of scientific texts is also required.
