Cert in Professional Cooking is a certificate in Culinary Arts programme taught at Collège Communautaire du Nouveau-Brunswick in Miramichi, Canada. The programme runs for 37 weeks. Tuition for international students is CAD 10,258 per year (CAD 3,662 per year for local students).
Professional Cooking is a certificate program offered by the Collège communautaire du Nouveau-Brunswick (CCNB) that prepares students for kitchen roles in restaurants, community institutions, or on trains and cruise ships. The curriculum covers preparing meats and seafood, stocks, sauces and soups, cold and hot appetizers, fruits and vegetables, eggs and dairy, and an introduction to pastry, alongside food-safety certification, nutrition basics, bilingual culinary terminology, and kitchen-control procedures, with practice sessions that build toward integrating into a professional kitchen brigade. The program includes a professional-kitchen stage as well as an international stage option, and is offered at the Edmundston campus, with a pathway into a second-year Culinary Arts program for graduates who continue their training. It suits students who enjoy hands-on, manual work, are meticulous and methodical, work well under pressure and in a team, and are comfortable with the physically demanding, sometimes hot and humid conditions of a working kitchen.
Requirements
Admission Requirements: Admission follows CCNB's Profile A: a New Brunswick high school diploma (regular, modified, or adult programme; PCE/PCR; CESA; PCEA), or GED/CCÉA; applicants who do not meet this pathway may instead pass the CCNB admission test, and international applicants need an equivalent secondary diploma plus this test. Some practicum placements may require basic English competency, and a medical examination and immunisation records may be required depending on the placement, at the student's own expense. As with all CCNB programmes, applicants whose mother tongue is not French, or who have not completed at least three years of French-language secondary schooling or a French-language postsecondary programme, must demonstrate French proficiency through the TFI (minimum score 700), TCF or TEF Canada (level B2), DELF (B2), or DALF (C1).
Application Details
Start Date:September
Application Deadline:Collège communautaire du Nouveau-Brunswick publishes no fixed application opening or closing dates, for either domestic or international applicants, for the autumn or winter session; the selection process begins in November for the following academic year, and complete applications are evaluated on a rolling basis as they are received. Rather than calendar deadlines, CCNB publishes a list, refreshed each cycle, of which programmes currently have admissions open (a 2026-27 list is live, covering Automne 2026), and it recommends applying early because some programmes draw more applications than seats available. Once an offer is made, domestic applicants have 30 days to confirm their place, while international applicants have 21 days. No separate international application deadline exists; the same rolling process applies to international applicants. These are institution-wide dates; this programme publishes no deadline of its own.
