Baking and Pastry Arts is a one-year certificate program at College of the North Atlantic, delivered on-campus at the Bay St. George campus, the only location in the province offering this training. The program covers the fundamentals of professional baking and pastry work, including food safety and sanitation, ingredient theory, preparation techniques and the science of ratios, with hands-on practice in real bakery environments. The program runs across three semesters: two regular 15-week semesters and one intersession of up to seven weeks. Admission requires high school graduation or an equivalent academic pathway, and international applicants must meet the college's English language proficiency requirements. The program begins each September. Graduates are prepared for entry-level roles in commercial bakeries, pastry kitchens and food service operations.

Admission Requirements: Applicants must meet one of the following: high school graduation; Adult Basic Education (Level III) graduation with a General College Profile (mathematics and science courses recommended); a Trades Bridging Certificate; a College Transition Certificate; or Mature Student status (age 19 or older, out of school for at least one year), assessed individually. International applicants must meet the college's English language proficiency requirements under policy AC-102-PR, Admission Procedures, Section 5.2.
