Trades - Apprenticeship in Cook II

This apprenticeship is designed for cooks already working in a professional kitchen who want to specialize further and progress toward Red Seal certification. It leads to an Ontario College Certificate (program code COA2) and covers advanced studies in international cuisine, baking, and garde-manger, preparing apprentices to write the Red Seal Certificate of Qualification exam. In-school instruction is delivered on campus two days a week, working toward the Level 1 and Level 2 competencies set by Skilled Trades Ontario, while the on-the-job apprenticeship component provides paid, real-world kitchen experience under supervision. As an apprenticeship, the program is arranged through Skilled Trades Ontario rather than the standard college application process, and candidates must already have a sponsoring employer before registering. The program is offered at Fanshawe College in London, Ontario.
