Program details

Overview

Training combines advanced patisserie techniques with the management knowledge required to run a bakery or pastry-focused business successfully. Students develop both the hands-on production skills and the operational understanding needed to oversee day-to-day business operations within the patisserie and baking sector.

Requirements

Admission Requirements: Admission to Baking and Pastry Arts Management requires an Ontario Secondary School Diploma or equivalent with Grade 12 English (C or U); mature applicants (19 or older, without an OSSD) may sit George Brown's Admissions Assessment for English or complete academic upgrading instead. The program page states no minimum grade, GPA, or English-language test score of its own, and international applicants are directed to George Brown's general International Admissions page for country-specific credential and language requirements. Students should be aware that nuts, dairy and shellfish are routinely used in the practical labs; while food purchased for production meets provincial and federal regulations, it may not meet halal or kosher dietary requirements.
