Holland College offers Cert in Pastry Arts, a certificate in Patisserie & Baking Arts programme in Charlottetown, Canada. The programme runs for 1 year, delivered on campus. Tuition for international students is CAD 13,796 per year (CAD 7,556 per year for local students).
This one-year certificate program, delivered through Holland College's Culinary Institute of Canada, focuses specifically on baking methods and pastry techniques rather than general cooking. Students study dough preparation, batters, custards, and classic French pastries alongside contemporary plated dessert design, and practice core baking skills such as bread, pies, cakes, cookies, and creams. The program also includes business coursework related to restaurant operations. Training is hands-on and campus-based, with students preparing desserts daily for service at the college's on-site restaurants at the Tourism and Culinary Centre. Admission generally requires a Grade 12 credential or equivalent along with the physical stamina needed for kitchen work; the program also accepts mature students and applicants whose first language is not English, subject to language requirements. The certificate suits students who want to specialize in pastry and dessert work specifically, whether aiming to work as a pastry chef in a restaurant or bakery, or eventually operate their own pastry business. Because the program is shorter and more specialized than the college's general Culinary Arts diploma, it fits students who already know they want to concentrate on baking and pastry rather than the broader culinary trade.
Requirements
Admission Requirements: The Pastry Arts page adds only one requirement to Holland College's general full-time admission rule: the ability to perform physically demanding kitchen tasks. Otherwise admission follows the college-wide standard (per the program page and hollandcollege.com's admission-requirements page): Grade 12 or equivalent with credits at or above the general level, plus a resume covering work, volunteer and extracurricular experience. A high school transcript and resume are required from every applicant, with a post-secondary transcript added where relevant; academic upgrading is available for missing credits, and mature-student applications are accepted. English is the language of instruction: applicants whose first language is not English demonstrate proficiency with IELTS Academic 6.5 (no band below 6), TOEFL iBT 85, CAEL 60 (minimum 50 per band), PTE Academic 60, Duolingo English Test 120 (no section under 115) or Cambridge B2 First/C1 Advanced/C2 Proficiency 176 (no band below 169), among other accepted tests; graduates of a Canadian high school who completed English 621 in P.E.I. (or its provincial equivalent) with at least 70%, or applicants with three consecutive years of full-time English-medium post-secondary study completed within two years of the program start, are exempt. The program runs a September intake at the Tourism & Culinary Centre.
