This certificate develops professional competencies in food-processing technology and food safety, focused on industrial meat transformation. The technology component covers every stage of processing, from animal carcass to food sub-products; the food-safety component covers hygiene, sanitation, risk analysis, and quality assurance through processing and commercialization of animal-origin food products. Aimed at holders of a CEGEP diploma and people already working in the field, the program prepares students to identify food-safety risk situations and propose appropriate risk-management measures, design and evaluate food-production processes that prevent contamination, and apply and maintain quality-assurance and monitoring programs. The 30-credit undergraduate certificate is delivered fully online in synchronous mode, apart from mandatory work placements, and can be completed full-time or part-time.
