This certificate develops foundational culinary skills including food preparation, kitchen operations and professional service standards. Training takes place in a live-service kitchen connected to the college cafeteria at the Lac La Biche Campus, giving students real-time experience with production cooking and customer service. Coursework covers knife skills, stocks and sauces, proteins, baking and garde manger alongside nutrition, and students complete industry safety certifications in First Aid, WHMIS, Food Safety and Fire Safety. The programme concludes with a 120-hour practicum in a commercial or institutional kitchen, for which a criminal record check may be required. The programme runs over approximately ten months across Fall, Winter and Spring terms, delivered in-person at the Lac La Biche Campus, with a single Fall intake. It is open to both domestic and international applicants, and tuition and mandatory fees are billed by term across the three terms of the programme.
